It's a warm, savory dish of eggs gently scrambled with a rich tomato base, topped with melted cheese. It's perfect for scooping up with crusty bread. For this recipe, you'll need: 4 eggs, 1 medium onion, 2 tablespoons of Lurpak Butter, 3 tablespoons of Tat Tomato Paste, 50g of Teksüt Mozzarella Cheese, and some White Toast Bread for serving.   1. Finely chop the onion. Grate or crumble the Teksüt Mozzarella Cheese and set it aside.
  2. Melt the Lurpak Butter in a skillet or pan over medium heat.
  3. Add the chopped onion and sauté for about 5 minutes until it becomes soft and translucent.
  4. Stir in the Tat Tomato Paste and cook for 1-2 minutes, stirring constantly to deepen its rich flavor.
  5. Pour in about 1/4 cup of hot water and stir to create a smooth sauce. Let it simmer for 2-3 minutes until it thickens slightly. Season with salt and pepper to your taste.
  6. Crack the eggs directly into the pan over the tomato sauce.
  7. Allow the eggs to set for about 30 seconds, then use a spatula to gently break the yolks and swirl them into the sauce. Don't overmix; you want lovely streaks of white and yolk.
  8. Cook for 2-3 minutes, stirring gently, until the eggs are softly set but still creamy and moist.
  9. Turn off the heat and immediately sprinkle the Teksüt Mozzarella Cheese over the top.
