Preparation
- Rinse 1 cup of Freekeh thoroughly under cold water. Cook according to package instructions (usually simmer in 2 cups of water or broth for 15-20 minutes until tender and water is absorbed). Fluff with a fork and set aside to cool.
- Preheat your oven to 200°C (400°F). Dice half of the onion and one green pepper into medium pieces. Toss them with 1 tablespoon of olive oil, a pinch of salt, and black pepper on a baking sheet. Roast for 15-20 minutes, or until tender and slightly caramelized.
- While the freekeh cools and vegetables roast, prepare the fresh ingredients. Dice the remaining half onion, 2 medium tomatoes, and 1 medium cucumber into small, even pieces.
- Drain and rinse 1 can (400g) of Al Safwa Chickpeas.
- In a large bowl, combine the cooled freekeh, roasted onion and green pepper, fresh diced onion, tomatoes, cucumber, and the rinsed chickpeas.
- For the dressing, whisk together 3 tablespoons of olive oil, the juice of 1 lemon, 1 teaspoon of dried mint, 1 tablespoon of Bürücek Pomegranate Molasses (if using), salt, and black pepper to taste.
- Pour the dressing over the salad ingredients. Toss gently to ensure everything is well coated.
- Taste and adjust seasonings as needed. You might want a little more lemon, salt, or mint.
- Serve immediately or chill for at least 30 minutes for the flavors to meld. This salad is wonderful served slightly warm or at room temperature.
Pro Tips
- For extra flavor, cook the freekeh in vegetable or chicken broth instead of water.
- Add some crumbled feta cheese or toasted nuts for an extra layer of texture and flavor.
- This salad is great for meal prep! Store the dressing separately and add just before serving to keep the vegetables crisp.
- For extra flavor, you can add a sprinkle of dried mint or oregano to the egg mixture.
- Feel free to customize with other seasonal vegetables like zucchini or mushrooms.
- This frittata is also delicious served cold, making it great for leftovers or a packed lunch.
- For an extra layer of flavor, you can add a pinch of dried mint or sumac to the dressing.
- Ensure your eggs are completely cooled before chopping to prevent them from crumbling too much.
- This salad is also delicious served over a bed of fresh lettuce or spinach for a more substantial meal.
