- 1/2 cup (75g) pitted green olives, such as Castelvetrano or Manzanilla
- 4 tablespoons (60ml) extra virgin olive oil

Preparation
- Rinse the freekeh thoroughly under cold running water in a fine-mesh sieve. In a medium saucepan, combine the rinsed freekeh with 2.5 cups (590ml) cold water and a pinch of salt. Bring the mixture to a rolling boil over medium-high heat.
