Preparation
- Rinse 1.5 cups of basmati rice under cold water until the water runs clear. Let it soak in a bowl of water for 20 minutes, then drain completely.
- While the rice soaks, peel and dice 2 medium potatoes into small 1-2 cm cubes. Finely chop 1 medium onion and mince 2 cloves of garlic.
- In a medium pot with a tight-fitting lid, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until softened.
- Add the minced garlic and diced potatoes to the pot. Stir in 1/2 teaspoon of turmeric and 1/2 teaspoon of cumin. Cook for 5-7 minutes, stirring occasionally, until the potatoes start to soften slightly.
- Add the drained rice to the pot and stir gently for 1 minute to coat the grains with the oil and spices.
- Pour in 3 cups of hot water and crumble in 1 vegetable stock cube. Season with salt and black pepper to your taste and stir once to combine.
- Bring the mixture to a rolling boil, then immediately reduce the heat to the absolute lowest setting.
- Cover the pot with the lid and let it simmer for 15-20 minutes without lifting the lid. The rice is done when all the water is absorbed.
- Turn off the heat and let the pot rest, still covered, for at least 10 minutes. This step is crucial for fluffy rice!
