  1. Rinse 1.5 cups of basmati rice under cold water until the water runs clear. Let it soak in a bowl of water for 20 minutes, then drain completely.
  2. While the rice soaks, peel and dice 2 medium potatoes into small 1-2 cm cubes. Finely chop 1 medium onion and mince 2 cloves of garlic.
  3. In a medium pot with a tight-fitting lid, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until softened.
  4. Add the minced garlic and diced potatoes to the pot. Stir in 1/2 teaspoon of turmeric and 1/2 teaspoon of cumin. Cook for 5-7 minutes, stirring occasionally, until the potatoes start to soften slightly.
  5. Add the drained rice to the pot and stir gently for 1 minute to coat the grains with the oil and spices.
  6. Pour in 3 cups of hot water and crumble in 1 vegetable stock cube. Season with salt and black pepper to your taste and stir once to combine.
  7. Bring the mixture to a rolling boil, then immediately reduce the heat to the absolute lowest setting.
  8. Cover the pot with the lid and let it simmer for 15-20 minutes without lifting the lid. The rice is done when all the water is absorbed.
  9. Turn off the heat and let the pot rest, still covered, for at least 10 minutes. This step is crucial for fluffy rice!
  10. Uncover the pot, fluff the rice and potatoes gently with a fork, and garnish with chopped fresh parsley before serving.
