Preparation
- Rinse 1 cup of freekeh and 1 cup of brown lentils thoroughly under cold water. Set aside to drain.
- Finely chop 1 large onion and mince 3-4 cloves of garlic.
- In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Add the minced garlic and 1 tablespoon of tomato paste to the pot. Cook for another minute, stirring constantly, until fragrant.
- Stir in 1 teaspoon of ground cumin, 1/2 teaspoon of black pepper, and 1 teaspoon of salt (or to taste). Cook for 30 seconds more, allowing the spices to bloom.
