Preparation
- Cut 2 chicken breasts (about 300g total) into 1-inch cubes. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add another 1 tablespoon of olive oil to the same skillet. Add 1 finely chopped small onion and sauté until softened, about 3 minutes.
