  3. Add the minced garlic to the pot and cook for another minute until fragrant.
  4. Stir in the frozen mixed vegetables, 0.5 teaspoon of salt, 0.25 teaspoon of black pepper, and 0.5 teaspoon of cumin. Sauté for 5-7 minutes until the vegetables are slightly tender.
  5. Remove the vegetables from the pot and set aside. Add the remaining 1 tablespoon of sunflower oil to the pot.
  6. Carefully arrange the sautéed vegetables evenly at the bottom of the pot. This will be the top layer when inverted.
  7. Evenly spread the drained Basmati rice over the vegetables in the pot.
  8. In a small bowl, mix the remaining 1 teaspoon of salt, 0.25 teaspoon of black pepper, 0.5 teaspoon of cumin, and 0.5 teaspoon of turmeric with the 3 cups of water (or broth).
  9. Gently pour the seasoned water over the rice and vegetables. Ensure the water just covers the rice. If needed, add a little more water, but be careful not to overfill.
  10. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to the lowest setting, cover the pot tightly with its lid, and let it simmer for 20-25 minutes, or until all the water is absorbed and the rice is tender.
  11. Once cooked, remove the pot from the heat and let it rest, still covered, for 10-15 minutes. This allows the flavors to meld and the rice to firm up.
