- 4 large eggs
- 2 medium tomatoes
- 1 green bell pepper

- 2 tbsp fresh parsley, chopped

- 1/4 tsp red pepper flakes (optional)
Preparation
- Dice the onion and green bell pepper. Grate or finely dice the tomatoes.
- Heat the Biryağ Sunflower Oil in a non-stick pan over medium heat. Add the diced onion and sauté until softened, about 3-5 minutes.
- Add the diced green bell pepper to the pan and continue to sauté for another 5-7 minutes until tender.
- Stir in the grated tomatoes, salt, black pepper, and red pepper flakes (if using). Bring the mixture to a gentle simmer and cook for about 8-10 minutes, stirring occasionally, until the sauce thickens slightly.
- Create four small wells in the tomato mixture. Crack one egg into each well.
- Cover the pan and cook for 5-7 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency (runny, soft, or firm).
- Garnish with fresh chopped parsley before serving.
